Gnocchi Skillet with Sausage & Tomatoes
1 pack Georgia Brand Cracked Pepper cut into coin slices
1/2 tsp coarse kosher salt
1/4 tsp freshly ground pepper
1 pint cherry or grape tomatoes halved lengthwise
1-2 oz. fresh basil
Cook the gnocchi according to the package directions. Drain and toss with a little bit of olive oil.
Heat a 10 inch or larger cast iron skillet over medium heat with 1-2 tbls of olive oil. Cook the sausage for 3-4 minutes until browned.
Push the sausage to one side of the pan and turn the heat to high.
Add the sliced tomatoes, skin side down allowing them to cook until the skin begins to blister and wrinkle but not so long that the tomatoes begin to sauce.
Mix with the sausage and cook for another 1-2 minutes. Add in the gnocchi and remove from heat.
Add the fresh basil and serve immediately. Can garnish with parmesan if preferred.
