One Pot Sausage and Zucchini Skillet


1 lb hot or mild fresh pork sausage)
1 tbsp vegetable oil
1 medium sweet onion
2 tsp minced garlic
1 can diced tomatoes with all of the liquid
2 tbsp yellow mustard
3 medium zucchini sliced thinly
1 package already cooked long grain rice
1/2 tsp salt and pepper
1/2 tbsp red pepper flake
1 cup shredded cheddar cheese


Cook the sausage over medium heat until no longer pink. Drain and remove sausage from pan.

In the same pot, cook zucchini and onion until tender.

Add minced garlic, salt, pepper, and red pepper flakes.

Stir in the diced tomatoes, rice, and mustard.

Bring to a boil, reduce and simmer for 5 minutes.

Add in the cheese and stir until melted
